  • 350 g horseradish root (grated. 3/4 lb / 2 cups)
  • 250 ml white vinegar (5% strength or higher)
  • 1/2 teaspoon salt (OR non-bitter, non-clouding salt sub)
  • 1/2 teaspoon lemon juice (optional. OR 1/4 teaspoon ascorbic acid.)
  • sugar (white. to taste.)

  1. Wash horseradish roots and peel.
  2. Grate the roots.
  3. Mix all ingredients together and pack into clean sterlized jars.
  4. Screw lids on jars tightly.
  5. Store in refrigerator.

Recipe Notes

The ascorbic acid / lemon juice is optional; it's to help prevent browning.

The optional drop of liquid stevia is to round out flavour.
