Ingredients

  • 1 kg onion (finely sliced. 8 cups / 2 lbs. Measurements are for after prep.)
  • 250 ml white vinegar (5% or higher. 1 cup / 8 oz)
  • 350 g sugar (white. 1 1/2 cups / 3/4 lb) OR 1 1/2 teaspoons liquid stevia
  • 1 teaspoon salt (OR non-bitter, non-clouding salt sub)
  • 1/4 teaspoon mustard seed

Instructions

  1. Slice onions.
  2. Bring a pot of water to the boil.
  3. Add onions to the pot of boiling water and let cook 4 minutes.
  4. Drain. Set aside.
  5. Put remaining ingredients in a large pot, and bring to a boil.
  6. Add the onion to the pot, and let simmer uncovered for 4 minutes.
  7. Pack hot onion into heated jars, leaving 2 cm (1/2 inch) headspace.
  8. Ladle liquid in, leaving 2 cm (1/2 inch) headspace.
  9. Onions should be fully covered by vinegar solution in jars -- heat up more vinegar in microwave or pot if you are going to be short.
  10. Debubble, adjust headspace.
  11. Wipe jar rims.
  12. Put lids on.
  13. Process in a water bath or steam canner.
  14. Process jars for 10 minutes; increase time as needed for your altitude.
