Instructions

  1. Wash and peel the zucchini.
  2. [Optional] Cut lengthwise into quarters, use a spoon and scrape the length of the centre to scoop large seeds from middle.
  3. Cut into 1 to 2 cm (1/2 inch) cubes, or, shred.
  4. Add to large saucepan with all the other ingredients.
  5. Bring to a boil, uncovered, then reduce to a simmer.
  6. Let simmer uncovered for 20 minutes.
  7. Ladle hot solids and liquid equally into heated jars.
  8. Leave 2 cm (1/2 inch) headspace.
  9. Debubble, adjust headspace leaving solids covered with liquid.
  10. Wipe jar rims.
  11. Put lids on.
  12. Process in a water bath or steam canner.
  13. Process jars 15 minutes for half-litres (pints.) Increase time as needed for your altitude. See table below.
